
Beef Patties

INGREDIENTS
For the Pastry:
- 375g plain flour
- 225g unsalted butter - cold and cubed
- 100g vegetable shortening - cold and cubed
- 1 tsp turmeric
- 1 tsp salt
- 125ml ice cold water
- Plus 100g unsalted butter for grating - frozen
For the Beef Filling:
- 450g minced beef
- 1 medium onion, finely chopped
- 2 Scallions, finely chopped
- 3-5 garlic cloves, minced
- 1 scotch bonnet pepper, deseeded and finely chopped
- 50g breadcrumbs
- 2 tsp thyme
- 1 tbsp curry powder
- 1 tbsp Minnas jerk seasoning
- 1 tsp smoked paprika
- salt and pepper to taste
- 1 tbsp oil
- 400ml beef stock

 METHOD
1. Prepare the Pastry:
- Attach the paddle attachment first, and add the cold, cubed butter to the dry ingredients. Mix on low speed until the mixture resembles coarse breadcrumbs.
- Once the butter is incorporated, switch to the dough hook attachment.
- Gradually add the ice cold water while the mixer is running on a low speed. Continue mixing until the dough begins to come together. It should form a soft dough.
- Once the dough has formed, stop the mixer. Shape the dough into a ball, wrap it in cling film, and refrigerate for at least 30 minutes before rolling it out.
2. Make the Filling:
- Heat the oil in a large pan over medium heat. Add the minced beef to the pan, breaking it up with a spoon. Cook until browned all over then drain any scummy liquid
- Add the chopped onions, spring onions, garlic, Minnas, scotch bonnet pepper, thyme, curry powder, paprika, black pepper, and salt. SautĂŠ about 5 minutes.
- Pour in the beef stock and reduce the heat to low and let the mixture simmer with the lid on for about 1 hour until reduces and has thickened.
- Remove the lid then add the breadcrumbs and cook for another 5 minutes.
- Allow the beef to completely cool.
3. Assemble the Patties:
- Preheat Oven: Preheat your oven to 200°C (180°C fan)/Gas Mark.
- Roll out the chilled pastry on a floured surface then grate half of the frozen butter onto the pastry and fold over.
- Roll out again then grate the remaining butter onto the pastry and fold over.
- Now roll out again to about 1/2cm thick. Cut out circles using a bowl or plate.
- Place about 2 tablespoons of the beef filling in the centre of each circle. Brush the edges with a bit of water, then fold the dough over to create a half-moon shape. Press the edges together with a fork to seal.
4. Bake:
- Place the patties on a baking sheet lined with parchment paper. Bake in the preheated oven for 30-35 minutes or until golden brown and flaky.
5. Serve:
- Â Allow the patties to cool slightly before serving.
